About the Recipe

Caramelised onions are wonderfully simple to make, and when done right, you end up with sweet, jammy, melt-in-your-mouth onions that feel like a little treat. My dad was the one who taught me how to make them when I was a child, and his secret was simple: a pinch of brown sugar stirred in at the start to add flavour, deepen the colour, and help everything break down and caramelise beautifully.


This recipe cooks the onions slowly over about twenty minutes on a low heat, which I find strikes the perfect balance between achieving delicious caramelisation and not spending too long hovering over the stove. If you prefer a deeper, richer result, you can leave them on for up to forty minutes. Just keep the heat low and stir often.

INGREDIENTS

1 large onion (or 1–1½ medium), thinly sliced


1 tsp butter


1 tsp neutral oil


½ tsp brown sugar


⅛ tsp of salt

METHOD

1.

Heat a pan over medium-low heat. Add the butter and oil.

Once the butter melts, add the onions, brown sugar, and salt. Stir to coat, then reduce heat to low and cook slowly, stirring every couple of minutes to stop the onions from sticking or frying.

After about 15–20 minutes, the onions will turn soft, golden brown, and sweet. Remove from the heat and serve.

Tips

Keep the heat low. Slow and steady is key. Low heat ensures the onions caramelise rather than fry and prevents any burnt bits.


Stir regularly. Onions need enough time on the pan to cook evenly, but too long without stirring can cause them to stick or burn.


Timing matters. I find twenty minutes is the perfect balance between deep caramelisation and not spending too long at the stove. For the darkest, richest onions, you can cook them for up to forty minutes, just keep the heat low and stir often.
