A golden honey mustard dressing with tangy vinegar and gentle sweetness.

ABOUT THE RECIPE
Honey mustard dressing earns its keep because it makes almost anything feel a little more finished. Honey softens the mustard, white wine vinegar keeps it bright, and the whole thing comes together in about a minute. Very useful over salads, roasted vegetables, chicken or fish.
THE RECIPE
Ingredients
1 tsp honey
2½ tbsp extra virgin olive oil
1 tsp Dijon mustard
1 tsp wholegrain mustard
1 tbsp white wine vinegar
¼ tsp salt
¼ tsp freshly ground black pepper
Method
1.
Add the honey, extra virgin olive oil, Dijon mustard, wholegrain mustard and white wine vinegar to a small bowl. Whisk until smooth and emulsified. Season with salt and pepper, adjusting to taste.

Make ahead
Taste before serving and adjust to suit. Add a little more honey for sweetness, or more vinegar if you want extra bite.
Store in the fridge for up to 3 days. Bring to room temperature and whisk again before using so the dressing comes back together.
Whisk steadily so the oil and vinegar emulsify into a smooth, cohesive dressing. It should thicken slightly and look glossy.
