About the Recipe

This Honey & Mustard Vinaigrette is one of those back-pocket recipes you’ll come back to again and again. It’s quick to make, uses pantry staples, and delivers a bright, balanced flavour that works with almost anything. The honey softens the sharpness of the mustards, while white wine vinegar keeps everything light and fresh.

Drizzle it over leafy salads, spoon it over roasted vegetables, or use it to finish grilled chicken or fish. It’s the kind of dressing that makes simple food feel considered, without adding extra effort to your day.

INGREDIENTS

1 tsp honey

2½ tbsp extra virgin olive oil

1 tsp Dijon mustard

1 tsp wholegrain mustard

1 tbsp white wine vinegar

¼ tsp salt

¼ tsp freshly ground black pepper

METHOD

1.

Add the honey, extra virgin olive oil, Dijon mustard, wholegrain mustard and white wine vinegar to a small bowl. Whisk until smooth and emulsified. Season with salt and pepper, adjusting to taste.

Tips

Whisk slowly and steadily to help the dressing emulsify into a smooth, cohesive vinaigrette. It should thicken nicely.

Taste and adjust before serving. Add a little extra honey for sweetness or vinegar for more bite.

This dressing can be made ahead and stored in the fridge for up to 3 days. Bring it to room temperature and whisk again before using.
