Spicy Avocado and Feta Bagels

Creamy avocado bagels with salty feta and a fresh chilli kick.

ABOUT THE RECIPE

Avocado bagels can be a bit sleepy, but feta and chilli fix that quickly. The avocado keeps things creamy, the feta brings the salty bite, and the chilli gives it enough heat to feel like breakfast with a pulse. Quick, satisfying and very easy to make on repeat.

THE RECIPE

Ingredients

2 bagels (such as plain, sesame, or everything)
2 ripe avocados
1 tbsp extra virgin olive oil
1 tbsp lemon juice
40g feta, crumbled
1 tsp chilli flakes
¼ tsp sea salt flakes, plus extra to finish
Freshly cracked black pepper, to taste
Fresh coriander, chopped, to serve (optional)

Method

1.

Toast the bagel halves until golden, then leave to cool until just warm.

2.

Halve the avocados, remove the stones, and scoop the flesh into a bowl. Mash with a fork until creamy and smooth.

3.

Stir in olive oil, lemon juice, and ¼ tsp sea salt flakes until well combined.

4.

Spread the smashed avocado evenly over each bagel half.

5.

Top with crumbled feta and a generous sprinkle of chilli flakes.

6.

Finish with extra sea salt flakes and freshly cracked black pepper. Scatter over fresh coriander if using.

7.

Serve immediately and enjoy.

Choose ripe avocado

Adjust the chilli

Add fresh herbs

Start with 1 teaspoon of chilli flakes, then add more if you want extra heat. A little smoked paprika also works for a softer, smoky kick.

Fresh coriander is optional, but it gives the bagel a lovely herby lift. Mint or parsley also work well if that is what you have.

Use avocados that give slightly under gentle pressure. They will mash into a smoother, creamier spread and sit better on the bagel.
