Nutella and Berry Bagels with Mascarpone

Toasted bagels with Nutella, mascarpone, fresh berries and mint.

ABOUT THE RECIPE

Nutella and berries are already doing the heavy lifting, so these bagels come together almost unfairly fast. Toasted bagel, mascarpone, fresh berries and a little mint keep the Nutella from taking over completely. Sweet, creamy and very much a café treat without leaving the kitchen.

THE RECIPE

Ingredients

2 plain bagels, sliced in half
80 g Nutella (about 4 tablespoons)
150 g blueberries (about 1 cup)
12 fresh raspberries
2 tablespoons mascarpone cheese
Fresh mint leaves, to garnish

Method

1.

Toast the bagel halves until golden and lightly crisp. Allow to cool slightly so they’re warm but not hot.

2.

Spread around 1 tablespoon of Nutella evenly over each bagel half.

3.

Top each half with 3 raspberries and a small handful of blueberries.

4.

Spoon small dollops of mascarpone over the fruit, distributing evenly.

5.

Finish with fresh mint leaves and serve immediately.

Cool the bagel slightly

Soften the mascarpone

Swap the fruit

If the mascarpone is very firm from the fridge, let it sit for 5 minutes or give it a quick stir so it dollops easily.

Use whatever berries or fruit look best. Strawberries, blackberries, sliced banana or mixed berries all work beautifully with Nutella and mascarpone.

Let the toasted bagel cool for a minute before spreading the Nutella. It keeps the Nutella thick and glossy instead of melting straight into the bread.
