Kiwi Onion Dip
The Kiwi party classic, with fresh chives, gentle heat and a little extra tang.

ABOUT THE RECIPE
There are some foods that instantly taste like home, and for New Zealanders, Kiwi onion dip is one of them. A cold bowl of it beside a generous pile of ready-salted chips belongs at barbecues, birthday parties and every good gathering in between.
My version keeps the classic combination of reduced cream and Maggi Onion Soup at its heart. It is cool, creamy and deeply savoury, with just enough brightness to keep you reaching for another chip.
THE RECIPE
Ingredients
1 can reduced cream, chilled
1 packet Maggi Onion Soup
2 teaspoons fresh lemon juice
½ teaspoon malt vinegar
½ teaspoon Worcestershire sauce
½ teaspoon garlic powder
1 tablespoon finely chopped fresh chives, plus extra to finish
A few grinds of black pepper
A small pinch of flaky sea salt
A small pinch of cayenne pepper
Ready-salted potato chips, or crisp crudités, to serve
Method
1.
Add the reduced cream, Maggi Onion Soup, lemon juice, malt vinegar, Worcestershire sauce, garlic powder, chives, black pepper, flaky sea salt and cayenne pepper to a bowl.

Mix together with a fork until everything is creamy and evenly combined.

Cover and chill for at least 30 minutes, though a couple of hours is even better. This gives the onion time to soften and all the flavours a chance to come together. You can also make it the night before.

Give the dip another good mix, spoon it into a serving bowl and finish with extra fresh chives. Serve cold with plenty of ready-salted potato chips, crisp crudités or a combination of both.

Vegetarian Friendly
Chilling the reduced cream before mixing gives the dip its lovely thick, scoopable texture from the outset.
The dip becomes even better after some time in the fridge. The dried onion softens, the seasoning mellows and the flavours come together beautifully.
Be sure to use a vegetarian Worcestershire sauce if serving this to vegetarians, as traditional versions often contain anchovies.
