Knickerbocker Glory
Strawberry sauce, vanilla ice cream, fresh strawberries and jelly, with all the extras.

ABOUT THE RECIPE
Who decided we were too grown up for a knickerbocker glory? Mine starts with strawberry sauce at the bottom of a tall glass, followed by vanilla ice cream, fresh strawberries and strawberry jelly. More sauce runs between the layers before the final scoop disappears under whipped cream, strawberries, a wafer, sprinkles and a little chocolate. Bring a long spoon.
THE RECIPE
Ingredients
2 tbsp strawberry sauce, divided
3 scoops vanilla ice cream
4 medium fresh strawberries, hulled and sliced
½ cup set strawberry jelly, cut into small cubes
Canned whipped cream, to finish
1 wafer biscuit
1 tsp sprinkles, or to taste
½–1 tsp chocolate sauce, for a small drizzle
Method
1.
Have the jelly set and cubed, the strawberries sliced and all the toppings ready. Spoon 1 tbsp strawberry sauce into the bottom of a tall, clear dessert glass.

Add one scoop of vanilla ice cream, about one-third of the strawberries and half the jelly. Drizzle with 1½ tsp strawberry sauce.

Add a second scoop of ice cream, another third of the strawberries and the remaining jelly. Drizzle with the remaining 1½ tsp strawberry sauce.
4.
Add the final scoop of ice cream. Finish with a generous swirl of canned whipped cream, the remaining strawberries, a wafer biscuit, sprinkles and a small drizzle of chocolate sauce. Serve immediately with a long spoon.

Let the layers show
Use firm, cold jelly
Serve immediately
Use a tall, clear glass and place some of the strawberry slices and jelly against the sides as you build. You should be able to see what is waiting underneath the cream.
Set the jelly fully before cutting it into small cubes, and keep it chilled until you assemble the sundae. It is easier to layer and gives a little wobble between the scoops of ice cream.
Add the canned whipped cream, wafer and sprinkles just before serving. The cream looks its best freshly swirled, and the wafer stays crisp.
