Three ingredients. One very good dip.

ABOUT THE RECIPE
A ripe avocado needs very little encouragement. This simple guacamole is made with just avocado, extra-virgin olive oil and flaky sea salt, mashed with a fork so there is still some texture in every spoonful.
I make it this way for Happy Nachos, where the tomato salsa brings the lime and chilli. The guacamole adds a cool, creamy spoonful to the warm chips and cheese sauce. It is just as welcome with tacos or a bowl of corn chips while dinner comes together.
THE RECIPE
Ingredients
2 avocados
½ tbsp extra-virgin olive oil
Flaky sea salt, to taste
Method
1.
Remove the flesh from the avocados and place it in a bowl. Mash with a fork, leaving some texture.
2.
Add the extra-virgin olive oil and flaky salt, then stir to combine. Taste and adjust the salt if needed.
3.
Serve straight away, or cover and refrigerate until ready to serve.
SAMANTHA'S NOTES
Ripe avocados
Leave some texture
Cover the surface.
Use avocados that yield to gentle pressure. The flesh should mash easily with a fork, giving you a creamy guacamole with a few soft pieces left throughout
A fork gives you control over the texture. Stop mashing while a few small pieces remain.
If you are preparing the guacamole before serving, press a food-safe covering against its surface and refrigerate. This limits its exposure to air and helps slow browning.
