About the Recipe

These sweet strawberry and lemon curd bagels are a simple yet indulgent treat inspired by a café creation my sister-in-law once made for me. The combination of lightly toasted bagels, smooth cream cheese, juicy strawberries, and bright lemon curd creates the perfect balance of creamy, fresh, and tangy in every bite.


They’re quick to make but feel special enough for a weekend brunch, morning catch-up with friends, or when you’re craving something sweet without turning on the oven. Beautiful to look at and even better to eat, these bagels prove that the simplest ingredients often make the most delicious meals.

Sweet Strawberry & Lemon Curd Bagels with Cream Cheese

INGREDIENTS

2 plain bagels, sliced in half 


80 g cream cheese, softened 


200 g strawberries, thinly sliced 


80 g lemon curd

METHOD

1.

Toast the bagel halves until golden and lightly crisp. Let them cool slightly so they’re warm, but not hot.

2.

Spread the cream cheese evenly over each toasted bagel half.

3.

Arrange the strawberry slices in overlapping layers around the surface of each bagel, creating a pretty circular pattern.

4.

Spoon small dollops of lemon curd over the strawberries.

5.

Serve immediately and enjoy while fresh.

Tips

Let the bagels cool slightly before spreading the cream cheese. If they’re too hot, the cream cheese will melt and lose its creamy texture.


Use ripe, sweet strawberries for the best flavour. If they’re slightly tart, the lemon curd will balance them beautifully.
