Paloma

Ruby red grapefruit, tequila and lime, finished with a salted lime-zest rim.

ABOUT THE DRINK

This fresh grapefruit Paloma is cold, sharp and sparkling, with the bittersweet flavour of ruby red grapefruit balanced by fresh lime and a little agave syrup.

THE POUR

Ingredients

Salt flakes, for the rim
Finely grated lime zest, for the rim
60 ml blanco tequila
90 ml fresh ruby red grapefruit juice
15 ml fresh lime juice
10 ml agave syrup
Ice, plenty
60 ml chilled sparkling water
2 lime slices
1 grapefruit wedge

Method

1.

Combine a small amount of salt flakes and finely grated lime zest on a plate. Moisten the rim of a highball glass with lime, then coat it lightly with the salt and zest mixture.

Add the tequila, grapefruit juice, lime juice and agave syrup directly to the glass.

3.

Stir until the agave is completely incorporated.

4.

Add enough ice to fill the glass.

5.

Top with the chilled sparkling water.

6.

Add the two lime slices and finish with a wedge of grapefruit. Serve immediately.

Use ruby grapefruit

Keep the rim light

Ruby red grapefruit gives the Paloma its beautiful coral colour and a slightly sweeter, more rounded grapefruit flavour.

Salt flakes can easily dominate a drink. Apply only a light coating and mix them with finely grated lime zest so the rim tastes bright and fragrant.

Protect the sparkle

Chill the grapefruit juice and sparkling water before making the drink. Add the sparkling water only after the ice, then serve immediately.
