Cardamom Syrup for Cocktails and Mocktails
A fragrant, gently spiced simple syrup for cocktails, mocktails, coffee & dessert.

ABOUT THE DRINK
Cardamom syrup is one of those small fridge extras that makes an ordinary drink feel instantly more considered. Made with equal parts water and caster sugar, it is warm, fragrant and gently spiced.
THE POUR
Ingredients
200 ml water
200 g caster sugar
20 green cardamom pods, lightly crushed
Method
1.
Combine the water and caster sugar in a small saucepan. Place over medium heat and stir gently until the sugar has completely dissolved and the syrup is clear.

Remove the saucepan from the heat. Add the lightly crushed cardamom pods and leave them to steep in the syrup for 20 minutes.

Strain the syrup through a fine-mesh sieve into a clean bottle or jar, discarding the cardamom pods. Allow it to cool completely, then seal and store in the fridge.
SAMANTHA'S NOTES
Dissolve fully
Store it cold
Stir until the sugar has completely dissolved. Any graininess now will show up later in cold drinks.
Keep simple syrup in a clean bottle or jar in the fridge. Label it with the date so it stays part of your bar rhythm.
Crack, don’t grind
Press each cardamom pod with the flat side of a knife until it splits and exposes the seeds. The pods should just be lightly cracked.
