French 75

Gin, fresh lemon and sugar syrup, shaken cold and finished with sparkling wine.

ABOUT THE DRINK

The French 75 looks delicate, but it has proper structure. Gin and fresh lemon make it bright and fragrant, a little sugar syrup rounds the edges, and cold brut sparkling wine lifts it into fine bubbles.

THE POUR

Ingredients

30 ml dry gin
15 ml fresh lemon juice
10 ml simple syrup (1:1 sugar and water)
Ice, for shaking
75 ml brut sparkling wine, very cold
1 lemon twist, to garnish

Method

1.

Chill a Champagne flute.

2.

Fill a cocktail shaker with ice. Add the gin, lemon juice and simple syrup, then shake firmly for 10 to 12 seconds, until very cold.

3.

Fine-strain into the chilled flute, then slowly top with the cold brut sparkling wine.

4.

Express the lemon twist over the surface of the drink, curl it neatly and place it in the glass. Serve immediately.

SAMANTHA'S NOTES

Use a true brut

Chill everything

Chill the wine and flute before you begin, and shake the gin mixture until properly cold. This keeps the finished cocktail lively.

A French 75 already contains simple syrup, so choose a properly dry brut sparkling wine. It keeps the cocktail crisp.

Cut a clean twist

Use a long strip of lemon peel with as little white pith as possible. The yellow skin provides fragrant citrus oils without adding bitterness.
