About the Drink

The mocktail Pomegranate Bitter Spritz is what you reach for when you want something that feels grown up, complex, and refreshing, without any alcohol. It has that same layered bitterness you’d expect from a classic spritz, but softened and brightened with pomegranate and citrus. The result is vibrant, slightly tart, and incredibly refreshing.


This version leans into contrast. Sweet-tart pomegranate juice meets sharp grapefruit, balanced with a non-alcoholic bitter aperitif or gentian syrup for depth. Topped with soda water, it becomes light and effervescent, while still holding enough structure to feel intentional rather than just fruity fizz.

INGREDIENTS

60 ml pomegranate juice 


20 ml grapefruit juice 


20 ml non-alcoholic bitter aperitif or gentian syrup 


40 to 60 ml soda water 


Orange peel or wedge to garnish

METHOD

1.

Add the pomegranate juice, grapefruit juice, and non-alcoholic bitter aperitif to a mixing glass filled with ice.

2.

Stir for about 10 to 15 seconds until the mixture is well chilled.

3.

Place a large ice cube into a rocks glass.

4.

Strain the chilled mixture over the ice.

5.

Top with soda water, adjusting the amount depending on how light or spritzy you prefer the drink.

6.

Give the drink a very gentle lift (stir) with a bar spoon if needed, garnish with a grapefruit wedge or pomegranate seeds, and serve immediately while sparkling.

Tips

Chill everything before you start. This drink is at its best when it goes from glass to sip without warming up, so cold juice and a well-chilled glass make a noticeable difference to the final texture and freshness.


Adjust the soda water to suit the moment. Less soda keeps it bold, concentrated, and slightly more bitter-forward. More soda makes it lighter, more sessionable, and closer to a sparkling spritz style drink.


The orange oil garnish is not just decoration. Expressing the peel over the top adds aromatic lift that softens the bitterness and ties everything together. Don’t skip it, it genuinely changes the drink.
