Pomegranate Bitter Spritz

Pomegranate, grapefruit and bitter aperitif topped with soda for a bright, grown-up spritz.

ABOUT THE DRINK

Pomegranate gives this spritz colour and tart sweetness, but the bitter aperitif is what keeps it from feeling like fruit juice in a nice glass. Grapefruit sharpens the edges, soda brings the lift, and the whole thing lands fresh, bitter-sweet and properly Friday Drinks.

THE POUR

Ingredients

60 ml pomegranate juice
20 ml grapefruit juice
20 ml non-alcoholic bitter aperitif or gentian syrup
40 to 60 ml soda water
Orange peel or wedge to garnish

Method

1.

Add the pomegranate juice, grapefruit juice, and non-alcoholic bitter aperitif to a mixing glass filled with ice.

2.

Stir for about 10 to 15 seconds until the mixture is well chilled.

3.

Place a large ice cube into a rocks glass.

4.

Strain the chilled mixture over the ice.

5.

Top with soda water, adjusting the amount depending on how light or spritzy you prefer the drink.

6.

Give the drink a very gentle lift (stir) with a bar spoon if needed, garnish with a grapefruit wedge or pomegranate seeds, and serve immediately while sparkling.

Keep it bitter

Chill before topping

Stir the pomegranate, grapefruit and bitter element with ice first, then strain and top with soda so the finished drink stays lively.

The bitter aperitif or gentian syrup is what makes this feel grown-up. Without it, the drink leans much more like fruit soda.

Top to taste

Use less soda for a stronger, more bitter spritz, or more for something lighter and more refreshing.
