ABOUT THE DRINK

Simple syrup is one of those small bar basics that makes mixing drinks much easier. Caster sugar and water melt into a clean, pourable syrup that blends straight into cold drinks, giving you smooth sweetness without gritty sugar sitting at the bottom of the glass.

THE POUR

Ingredients

1 cup water, room temperature
1 cup caster sugar

Method

1.

Add the caster sugar and room temperature water to a small saucepan.

2.

Place over a medium heat and stir continuously until the sugar fully dissolves and the liquid turns completely clear. This should take around 5 minutes.

3.

Remove from the heat and leave to cool completely in the pan.

4.

Once cooled, pour into a clean glass bottle or jar and seal tightly.

5.

Store in the fridge and use as needed.

SAMANTHA'S NOTES

Use equal parts

Dissolve fully

Stir until the sugar has completely dissolved. Any graininess now will show up later in cold drinks.

A 1:1 syrup means equal parts caster sugar and water. It is light, balanced and easy to use across cocktails and mocktails.

Store it cold

Keep simple syrup in a clean bottle or jar in the fridge. Label it with the date so it stays part of your bar rhythm.
