Whiskey Sour

Fresh lemon, whiskey and sugar syrup shaken into a silky sour with soft egg white foam.

ABOUT THE DRINK

A whiskey sour is sharp, smooth and much more elegant than the short ingredient list suggests. Fresh lemon cuts through the warmth of the whiskey, sugar syrup rounds the edges, and the egg white gives it that pale, velvety top that makes the whole drink feel properly made.

THE POUR

Ingredients

60ml whiskey
30ml fresh lemon juice
20ml sugar syrup
1 egg white
Lemon twist, to garnish

Method

1.

Add the whiskey, fresh lemon juice, sugar syrup, and egg white into a cocktail shaker.

Shake hard without ice first. This is your dry shake. It builds that signature silky foam and gives the drink its texture.

Now add ice and shake again until the shaker feels properly chilled and slightly frosted on the outside.

4.

Strain into a chilled coupe or rocks glass. You want that smooth, pale foam sitting on top.

5.

Finish with a lemon twist. Give it a quick squeeze over the top to release the oils, then drop it in or rest it on the rim.

SAMANTHA'S NOTES

Use fresh lemon

Dry shake first

Shake without ice first to build the egg white foam. Then add ice and shake again until the drink is properly chilled.

Fresh lemon juice is essential here. Bottled juice will not give you the clean, sharp citrus this drink needs.

Strain smoothly

Strain into a chilled glass so the foam sits neatly on top. That soft, pale layer is part of the whole point.
