About the Drink

The Cold Brew Velvet is what happens when a coffee mocktail decides to get dressed up for Friday night. It has the depth of cold brew, the warmth of maple and vanilla, and a soft, luxurious foam that makes it feel like a proper occasion drink.


The tiny pinch of salt stops it from becoming flat or overly sweet. It lifts the coffee, balances the syrups and give the drink a more polished, cocktail-style finish.

Cold Brew Velvet Mocktail

INGREDIENTS

75 ml cold brew, or cooled espresso


20 ml maple syrup


5 ml vanilla syrup


1 egg white


10 ml lemon juice


Pinch fine sea salt


Ice, for shaking


Coffee beans, grated chocolate or a light dusting of cocoa, to garnish, optional

METHOD

1.

Chill a coupe glass.

2.

Add the cold brew, maple syrup, vanilla syrup, egg white, and salt to a cocktail shaker.

3.

Dry shake without ice for 15 seconds to build the foam.

4.

Add ice to the shaker.

5.

Shake again for 12 to 15 seconds, until well chilled and silky.

6.

Fine strain into the chilled coupe.

7.

Garnish if desired and serve immediately.

Tips

Use proper cold brew for the smoothest result. Cold brew gives this drink a round, mellow coffee flavour. Cooled espresso will also work, but it will taste stronger and more intense.


The salt matters. A tiny pinch of fine sea salt brings out the coffee, maple and vanilla. Keep it small.


Dry shake first. The first shake without ice helps the egg white foam properly. The second shake with ice chills and finishes the texture.


Egg safety note. Use fresh, clean, good-quality eggs. For anyone avoiding raw egg, use pasteurised egg white or a cocktail foamer.
