Cucumber Herb Tonic
Fresh cucumber, lime and tonic water with a crisp botanical finish.

ABOUT THE DRINK
Cucumber juice gives this tonic its clean, garden-fresh base, while lime keeps it bright and tonic brings the bubbles and bitterness. It is light, crisp and properly refreshing, with herbs doing just enough to make it feel like a drink, not a compromise.
THE POUR
Ingredients
60 ml cucumber juice
15 ml lime juice
Ice, plenty
100 ml tonic water
Cucumber slice, to garnish
Fresh herbs, such as mint, basil or rosemary, to garnish
Method
1.
Fill a highball glass generously with ice.
2.
Add the cucumber juice and lime juice.
3.
Top with tonic water.
4.
Stir gently to combine.
5.
Garnish with cucumber and fresh herbs. Serve immediately.

Use fresh cucumber juice
Add tonic last
Pour the tonic after the cucumber and lime, then stir gently. This keeps the bubbles lively and the drink light.
Fresh cucumber juice gives the cleanest, brightest flavour. Strain it if needed so the drink feels crisp rather than pulpy.
Choose soft herbs
Mint, basil or rosemary all work, but keep the garnish restrained. You want botanical freshness, not a glass full of garden clippings.
