About the Drink
This Cucumber Herb Tonic is fresh, cooling and quietly sophisticated. Cucumber juice gives it a clean garden-style base, lime adds brightness, and tonic water brings the bubbles and bitterness that make it feel like a proper drink.
It is the mocktail side of this week’s Friday Drinks pairing, designed to sit beautifully beside a classic martini. Light, crisp and refreshing, it is ideal when you want something alcohol-free that still feels grown-up.
INGREDIENTS
60 ml cucumber juice
15 ml lime juice
Ice, plenty
100 ml tonic water
Cucumber slice, to garnish
Fresh herbs, such as mint, basil or rosemary, to garnish
METHOD

Fill a highball glass generously with ice.

Add the cucumber juice and lime juice.
3.
Top with tonic water.
4.
Stir gently to combine.
5.
Garnish with cucumber and fresh herbs. Serve immediately.
Tips
Use fresh cucumber juice. For the cleanest flavour, blend or grate fresh cucumber, then strain it through a fine sieve. You can also use a juicer.
Do not overdo the lime. The lime should brighten the cucumber, not overpower it. Start with 15 ml and adjust from there.
Choose a tonic you like. Tonic water has a strong flavour, so use one you would happily drink on its own. A lighter tonic will make the drink softer, while a more bitter tonic will make it feel more adult.
Make it look generous. A cucumber slice, herb sprig and plenty of ice will make this feel like a polished Friday drink rather than a soft drink.
Mix up the herbs for something new. Mint makes it extra fresh, basil gives it a slightly savoury garden flavour, and rosemary makes it feel more elegant and aromatic.
